Resipi Hari Raya

Ingredients

800g sauerkraut
1 onion
50g shortening or cooking fat
A few juniper berries or 1/2 tsp cumin or caraway seeds
Salt
Sugar
1/8 litre stock
A little white wine (optional)
1 small raw potato or 1 tablespoon potato flour

Method
1. Peel the onion, chop finely and fry in the fat.

2. Add the sauerkraut, juniper berries or cumin/caraway, salt, sugar and a little stock.

(Usually the sauerkraut is cooked with a piece of smoked meat or smoked sausage on top. An hour’s cooking is called for, with less time for the canned variety.)

3. Thicken with with grated raw potato or potato flour.

Note: Sauerkraut needs to be rinsed in order to get rid of the bitter taste if it has been stored in the barrel.

If canned or foil-packed sauerkraut is used, simply drain it.

Recipe for Raya:

Ingredients
2 tbsps oil
500g prawns
1 large onion, chopped
Maggi Chilli Prawn Mix
3/4 cup water
2 tomatoes, chopped
spring onions, finely sliced

Method
1. Heat oil and fry onions over a high heat for five minutes and fry prawns.

2. Blend chilli mix (pre-mixed with 3/4 cup water) with tomatoes, and cook until sauce thickens.

3. Serve on bread, baguette, buns or Chinese dumpling. Garnish with spring onions.

THERE’S no better accompaniment to strawberries than cream strawberry charlotte cake.

To make this delightful dessert, boil straw puree with sugar and leave it aside to cool.

Warm fresh milk and mix it into the earlier mixture. Dissolve gelatine and beat full cream.

Mix all the ingredients together.

Make a round of lady fingers in a mould. Fit the vanilla layer in at the bottom of the mould. Pour the mixture into the mould.

Place another layer of vanilla sponge and lastly pour in the remaining mixture into the mould.
