Resipi Hari Raya

Ingredients

800g sauerkraut
1 onion
50g shortening or cooking fat
A few juniper berries or 1/2 tsp cumin or caraway seeds
Salt
Sugar
1/8 litre stock
A little white wine (optional)
1 small raw potato or 1 tablespoon potato flour

Method
1. Peel the onion, chop finely and fry in the fat.

2. Add the sauerkraut, juniper berries or cumin/caraway, salt, sugar and a little stock.

(Usually the sauerkraut is cooked with a piece of smoked meat or smoked sausage on top. An hour’s cooking is called for, with less time for the canned variety.)

3. Thicken with with grated raw potato or potato flour.

Note: Sauerkraut needs to be rinsed in order to get rid of the bitter taste if it has been stored in the barrel.

If canned or foil-packed sauerkraut is used, simply drain it.
