Ingredients

10 eggs
600g sugar
600g flour
1/2 bottle ice-cream soda
1/2 coconut
2 pandan leaves
red and green colouring

Method
1. Beat eggs and sugar until fluffy. Mix in sieved flour and ice-cream soda. Stir well.

2. Divide mixture into two portions. Colour one portion red and the other green.

3. Line mould with greaseproof paper. Place red and green mixture alternately in mould and steam.

Note: This apam is best eaten with grated coconut (remove the kulit ari or brown skin).

To keep the coconut for a longer period, steam the coconut with pandan leaves. This will also make the coconut fragrant.
