Ingredients
1 medium-sized arrowroot or fun kot
120g peanuts
10 red dates, seedless
1/2 a chicken with skin removed, chopped up, or 600g pork ribs
2 1/2 litres of water
2 tsps sea salt or to taste
Method
1. Peel off the skin of the fun kot and cut into chunks.
2. Boil water in a large claypot or any soup pot and add chicken. Skim off any scum or oil that floats up.
3. Add the fun kot, peanuts, red dates and salt.
4. Simmer over a low fire for at least three hours.
Note: Instead of peanuts you could add 100g black or red kidney beans and 80g yok chok, a Chinese herb.
